Six Ingredient Peanut Butter Cookies

I’ve been reading about the viral 5 ingredient cookie for a while. And it’s been on my list to test. Every week when I thought about playing with it something else swooped in and stole my attention. But not this week!

I wanted share a pantry recipe. Something with ingredients you already have, that can go from random items to done in 30 minutes.

And holy cow do these cookies deliver. Although I liked them with 5 ingredients, they tasted like the sum of their parts. No big surprises. But adding a little nutella takes the nuttiness over the edge. And gives it the tiniest bit more moisture that gives them that real chewy interior. And exterior crunch is excellent.

This year is going to be all about easy cooking. Delicious, quick favorites that we can all use on repeat. And this cookie is a great place to start. :)

Six Ingredient Peanut Butter Cookies

Ingredients

  • 1 2/3 cup light brown sugar

  • 2 large eggs

  • 1 teaspoon vanilla extract

  • 1 3/4 cup Jif peanut butter (or other processed no stir peanut butter)

  • 2 tablespoons Nutella

  • flaky sea salt, to finish

Directions

Step 1 — In a large mixing bowl beat together the sugar and eggs. I suggest using a hand mixer as the batter gets pretty thick. I didn’t do that the first time and legit woke up with a sore arm.
